Coconut Thai Peanut sauce

This recipe will add flair to your cooking routine, you’ll want to keep a jar of this on hand in your fridge for those easy weeknight dinners when you feel tired and pinched for time.

I have no idea how this recipe landed in my very old sunflower dairy

(a old falling apart dairy I’ve taken all over the world filled with notes and recipes i’ve learned along the way)

But, it’s there. And I’ve loved using it. I’ve shared it with friends, even cooked for a group of women at a retreat in March and it was a big hit. Diverse, simple and easy on the palate for most people. Not to spicy or peanut buttery, a perfect blend to satisfy all, even children love this sauce.

“the secrets in the sauce”

I’m a big advocate for sauces, dressings and spices.

I was haled the ‘spice lady’ when I lived communally for 4 years. Cooking for minimum of 10 people every night or other night.

How to use this sauce-

Dip your fav summer rolls in this sauce, or lightly drizzle over a Thai Salad, or as the main star in your dish.

The many ways it can enjoyed is what I love about it.

I like to share these recipes in hopes to make someone feel more easeful in making wholesome food from scratch and less over whelmed when busy and tired.

 

you’ll need

Measuring cups and spoons, silicone spatula and a good quality blender. That’s it.

 

coconut Thai peanut sauce

Warming, spicy, creamy and fantastic

DAIRY-FREE + VEGAN + GLUTEN FREE

INGREDIENTS-

  • 1 13.5 oz can of organic coconut milk

  • 1/3 cup organic smooth peanut butter

  • 2.5 Tbls red curry paste ( I use Aroy-D or Thai Kitchen)

  • 2 1/5 Tbls of Maple Syrup

  • 1 Tbls Tamari or Soy Sauce

  • 1-2 cloves fresh garlic peeled

  • 2-3 Tbls of lime juice depending on your taste. Usually its a full small lime

  • Pinch of salt

  • 1/4 cup fresh cilantro

  • OPTIONAL- 2 Tbls Fish sauce, I usually make without but its also a nice addition


Prep time: 10 mins Servings: 4-8 people

INSTRUCTIONS-

  • Place all ingredients in Blender and blend on high until smooth and combined, usually 1 minute does the trick.

  • If you’re using this for a stir-fry styled dinner, I suggest cooking your vegetables, tofu or meat and then adding this sauce at the end for a light simmer no longer than a few minutes, sometimes I only add half of the sauce and keep the rest in the fridge for another night when cooking for 2. But this recipe also serves well for the whole family.

  • If adding to Thai salad, drizzle the desired amount and enjoy.

  • Dipping sauce is self explanatory 😉
